Ingredients
- Fingerling Potatoes: I used one bag of fingerling potatoes (about 1.5 lb – or 680g). You can find them in most grocery stores. They are small and finger-shaped. These potatoes are mild in flavor and an excellent side dish for busy weeknights.
- Vegeta seasoning: I used one of my favorite seasonings for this recipe – Vegeta. This seasoning comes from Europe, but you can find it in any store with Balkan food or on Amazon. Vegeta has the perfect blend of vegetables, herbs, spices, and natural ingredients.
- Garlic powder: Just a bit of garlic powder enhances the flavor of crispy and tender potatoes.
- Smoked paprika: Smoked paprika will give color and flavor to these potatoes. Deep and rich flavor will go great with other spices.
- Rosemary leaves: I used dry rosemary leaves to add flavor and smell. If you want fresh rosemary leaves, please refer to the notes where I talk about amount conversion.
- Oil: One tablespoon of olive oil will be plenty to coat the potatoes.
See recipe card for quantities.

What are Fingerling Potatoes
Fingerling potatoes are a small, finger-shaped type of potatoes. They naturally grow small and narrow. People often confuse them with new potatoes because of their size.
They are mild in flavor and easy to add to your diet.
Instructions
These air-fried fingerling potatoes are perfect for busy weeknights. With simple ingredients and easy and quick preparation, you will have the most delicious side dish in under 30 minutes.
- Prepare the potatoes: Wash and scrub the potatoes. Pat them dry with a paper towel and cut them lengthwise. Add them to a medium-sized bowl. Set aside.
- Gather oil and seasonings: Add oil to potatoes and mix until evenly coated. Add all seasonings to a bowl and mix until incorporated.
- Bake: Transfer the potatoes to an air fryer (rack) in a single layer. Bake for 10 minutes, remove from the air fryer, toss and bake for another 10 minutes.
- Serve: Serve with your favorite condiment or sprinkle the grated parmesan cheese while warm and add chopped parsley leaves.
Expert Tips and Tricks for Success
- Arrange the potatoes in a single layer: To make sure all potatoes will be evenly baked and crispy, arrange the potatoes in a single layer.
- Pat dry potatoes with a paper towel: After washing and scrubbing them, pat them dry with a paper towel.
- Double the recipe: If you want to double the recipe, I suggest using two air fryer racks – for those of you who use the oven-type air fryer, like Breville. If you have a regular air fryer, bake them in two batches.
- Use the baking sheet: For effortless cleanup and to avoid crumbles falling from the air fryer tray (if using an oven-type air fryer like Breville), place the baking sheet under the air fryer while preparing the recipe. I also use it while removing the tray from the air fryer to toss the potatoes halfway through baking.
Substitutions and Variations
- Use baby potatoes: If you can not find fingerling potatoes, use baby potatoes instead.
- Use fresh herbs: If you prefer fresh herbs to dry ones, substitute one teaspoon of dry rosemary leaves for one tablespoon of fresh rosemary.
- Use different oil: Use any oil you prefer except coconut oil. Coconut oil will alter the taste of the potatoes.
- Use different seasonings: Have your favorite seasoning? Feel free to use it.
- Add other toppings: To make these potatoes a little extra, sprinkle the parmesan cheese on top while the potatoes are warm and add fresh chopped parsley.
