This Sutlijaš (Balkan Rice Pudding) is a creamy and comforting dessert made with arborio rice, milk, cane sugar, and vanilla sugar. Prepare the Rice: Rinse the rice under cold water to eliminate excess starch. Combine the rinsed rice and water in a small pot or saucepan, then lightly simmer over high heat until the water is nearly completely absorbed.
Heat the Milk: While the rice is cooking, pour the milk into a large pot and heat it over medium-high until it’s hot but not boiling. This should take about 5 to 7 minutes.
Combine the Rice and Milk: Stir the partially cooked rice into the hot milk right away to avoid sticking. Reduce the heat to medium and stir often to ensure even cooking.
Add Sweeteners: After 15 minutes of cooking, add the cane sugar and vanilla sugar. Stir well to combine, then continue cooking for another 5 minutes, stirring frequently.
