This Raspberry Mule is a vibrant cocktail that infuses the sweet-tart taste of raspberries with the zesty and spicy elements of lime and ginger beer. Prepared with homemade raspberry simple syrup and served in a classic copper mug, it’s a refreshing and eye-catching drink, perfect for any occasion.
Add sugar, water, and raspberries into a medium-sized pot on medium-hight heat.
Simmer for 12 minutes, mixing occasionally. Do not boil the syrup. Lower the heat if needed.
Remove from heat and let cool for at least 15-20 minutes.
Strain the syrup using a fine mesh strainer and a spoon to extract as much as possible.
Let cool completely before storing in an airtight jar or a syrup dispenser. Label it and store it in the fridge for two weeks.
