This Carrot Juice Mocktail is a vibrant, citrusy drink made from pure carrot juice, fresh orange and lime juice, and a splash of ginger beer and seltzer water. Refreshing, earthy-sweet, and lightly fizzy—it's the perfect non-alcoholic beverage for warm days.

Carrot Mocktail
2ozcarrot juice
2ozorange juice(freshly squeezed)
1ozlime juice(freshly squeezed)
2ozginger beer
2ozseltzer water
Garnish
1fresh carrot with green top(optional)
lime wedges(optional)
orange wedges(optional)
edible flowers(optional)
Instructions
Add the juices: Pour chilled carrot juice into a tall glass or jar. Add freshly squeezed orange juice and lime juice.
Add ice: Fill the glass about ¾ of the way with ice.
Top with fizz: Pour in the chilled ginger beer, followed by the seltzer water. Stir gently to combine.
Garnish and serve: Garnish with a whole carrot with green tops for a rustic touch, or use a lime or orange wedge if you prefer. Serve immediately.
Notes
Carrot Juice: Use 100% pure carrot juice with no added sugar for the best flavor. I used Bolthouse Farms carrot juice, which I picked up at Target.
Chill Everything: For the most refreshing flavor, make sure all ingredients are well chilled before assembling—this helps maintain the fizz and prevents dilution.
Ginger Beer Tip: Add ginger beer and seltzer last to preserve their natural carbonation. Stir gently, not vigorously.
Garnish Options: A whole carrot with green tops makes a beautiful rustic garnish, but it’s optional. You can also use lime or orange wedges, carrot ribbons, or fresh mint.
